Ku De Ta is a spectacular beachfront venue on the south-west coast of Bali which has amazing views over the Indian Ocean. It is a fine dining restaurant, serving Mediterranean and international cuisine, and a cocktail lounge that has become a mainstay of the island’s bar scene since its opening in 2000. It is a decidedly open-air place, with alfresco tables overlooking the sand and a walk-through interior, which offers sea breezes in place of walls and windows.

This bar-restaurant is in Seminyak, the northern enclave of Kuta which has developed later and in a more niche direction than some of the earlier established tourist areas. Similarly, though the design is quite modern, Ku De Ta retains a Balinese tang.

The Bartender

Thirty-year-old Bayu Wiseso Pandu Resi has spent half of his decade-long career at Ku De Ta and he is a man who clearly loves his job. While Indonesian visitors often want something foreign when they head out to Ku De Ta, Bayu loves introducing foreign tourists to Balinese fruits including tamarind, custard apple, rambutan and lychee, and tropical berries such as buni. He credits his colleague Ngurah Sukadana, and manager Bruce Bartholomew as mentors in bar craft.

The Drink

The Gin & Juice cocktail is prepared as a fresh, fruit-laden alternative to that most omnipresent bar classic, the G & T. The recipe is tailored to a tropical, beachside locale and anchored by Tanqueray No.Ten, Bayu’s favourite gin for its citrus flavour and smoothness. The homemade pomegranate syrup, pink grapefruit juice and fresh local pomelo are selected to for their perfect balance between sweet and sour tastes, the major theme of this modern, dusky pink drink.

The Technique

Tanqueray No. Ten • 45ml
Campari • 15ml
Sweet & Sour mix • 30ml
Fresh pink grapefruit juice • 30ml
Pomegranate syrup • 5ml
Pomelo • 1/4 wedge
A twist of orange zest to garnish
Contains 20 grams of alcohol per serve

To make your own sweet & sour mix, add 2 tablespoons of sugar to 225ml of lemon juice and stir.

Muddle all the ingredients together. Strain into a highball glass with ice.
