Located in the Western Caribbean, the Cayman Islands offers master bartender Simon Crompton a wide range of seasonal ingredients to create his own original take on classic cocktails. “In the Caribbean different fruits grow at different times of year, so it is important to keep in contact with the local farmers” says Simon. “I try to take products that no one else uses on the islands, I speak to the farmers and trial something they give me and build on top of that.” Simon enjoys using local spices, citrus and interesting fruits, like the soursop: “a prickly pear or pawpaw with delicious white flesh inside, which tastes like passion fruit, pineapple and strawberry.”

Located at Agua Restaurant & Lounge on Seven Mile Beach, Simon’s featured cocktail is The Johnnie Wayne, which is loosely based on a whisky sour. Making use of locally sourced honey, lemon juice and flamed orange zest, Simon says: “the indulgence of the ingredients and the depth of flavour make this an amazing after dinner or dessert drink. It has a great aroma.”
