Each bartender showcases the perfect location, the most inventive cocktail and the finest of ingredients and spirits that define the 'must have' fine drinking experience in their city.

The trick with cocktail pairing is to choose tasty, punchy dishes, which can stand up to the powerful flavours of a cocktail. What drink to have with a particular dish is usually best governed by the main flavour, for example if you’re having a lamb dish it’s often a nice idea to have a mint-based cocktail and steaks can be enhanced by whisky, because of its oak barrelled accents. With Mexican and Asian cuisines, citrusy cocktails often work well to cut through the richness and they’re also a good foil for spices.

In the World Class 50, cocktails have been paired with foods as diverse as hotdogs to grilled bortago and beef tataki. Though an increasing number of venues plan menus and drink cards in ever closer conjunction, we thought two in particular – St Pauls Apothek and Tippling Club – were particularly skilled practitioners in the art of food matching.
