FIG TEMPURA

Kirill Runkov, Heston-esque experimental bartender from Russia, likes to serve Guinness tempura fried figs to accompany his Barbarian Cocktail.

To make the tempura: Mix 200g of wheat flour with 200ml of Guinness, add 30g of starch and 2 whole eggs. Mix thoroughly with a whisk or fork. Cover the fresh fig with batter and then fry in sunflower or vegetable oil using a deep fat fryer until the figs turn golden.
