Today’s feature cocktail is The Johnnie Wayne. The name was inspired by the first girl who tried the drink, who described it as “indulgent; a cowboy in a tuxedo!” Like John Wayne in a tux, the name “Johnnie Wayne” was born.

The Recipe

Johnnie Walker Blue Label • 45ml
Fresh lemon juice • 22.5ml
Local honey • 15ml
Grand Marnier Cuvée du Cent Cinquantenaire • 10ml
Five kirsch morello cherries
Contains 18 grams of alcohol per serve

Dip the cherries in angostura bitters and flambée in a mixing glass to give a burnt caramel flavour. (For an at home alternative you can just buy pre-soaked cherries). Muddle all the ingredients. Shake with ice. Fine strain into an Old Fashioned glass.

Garnish with additional cherries and flamed orange zest.

The Johnnie Wayne is a perfect drink after dinner at Agua Restaurant and Lounge, following a long lazy day on Seven Mile beach in the Cayman Islands.
