We asked Cross Yu, award winning bartender from Muse on the Bund in Shanghai, his thoughts on the bartending industry in China. “It’s growing fast and is now on a much more internationally acclaimed level, and more bars and bartenders are setting themselves apart by using local Chinese ingredients. Bartenders are getting more popular and well respected, it’s become a career of craftsmanship. Consumers are starting to crave cocktail culture, and look forward to having different interactive experiences with bartenders to learn more, which places us in a strong position.” He goes on to say: “I personally use a lot of traditional Chinese ingredients, like tea and ginger. I have a herb station where everything is prepared fresh too.”
