Today’s feature cocktail is the Kiss Above The Clouds by Cross Yu. It was inspired by the base spirit, Ron Zacapa, and the way the rum is produced at altitude in Guatemala. “It’s a favourite brand of mine” says Cross, “it’s aged on a mountain, hence the name ‘house above the clouds’, as it ages more slowly in the cooler temperatures. It’s a rich and warm drink, it’s smooth but complex.”

The Recipe

Ron Zacapa 23 • 60ml
Johnnie Walker Gold Label Reserve • 5ml
Cocchi de Torino (Italian Vermouth) • 20ml
Tia Maria • 5ml
Chocolate bitters 2 dashes
Contains 25 grams of alcohol per serve

Pour all the ingredients into an ice-filled mixing glass. Stir until well chilled – Cross freezes the bottle of Zacapa in advance to ensure the optimum temperature is reached quickly while avoiding too much dilution.

Strain into an Old Fashioned glass with one piece of hand-cut ice. Garnish with a twist of orange.
