Clark Alvarado’s unusual twist on a margarita uses the local Costa Rican fruit, naranjilla. “I wanted to create a Margarita using local produce, so I tried a few, but the naranjilla was the best by far because of it’s unusual green juice with a really citrusy tang”, says Clark. The salt air, which sits on top of the cocktail, is made using a new technique to make a foamy mousse in which the salt is suspended. The foam is held together by sucrose and is a nice, aromatic alternative to using salt crystals. “The cocktail combines the best of the local and the traditional with really interesting ideas and technology, which is how I like to work.”
