Everyone’s gone Scandi-mad recently, and with trendy, gastronomic venues like Noma getting some of the highest accolades in the world, Denmark is now known as a foodie mecca of Europe. Following in these footsteps, award winning bartender Hasse Bank Johansen opened what he calls a ‘food bar’, St. Paul’s Apothek, in Aarhus with his friend and top chef back in 2012.

St Paul’s Apothek occupies the premises of a former dispensary. The 110 year old apothecary has an amazing stucco ceiling and classic Danish design furniture made from Brazilian rosewood. Picture a huge selection of bottles towering on 4m shelves, with a ladder to reach the top most tinctures and syrups. The bar is low, making the bar open for customers to analyse everything the bartenders do behind the bar.

"Our restaurant serves cocktails to go with the food, so we do a drinks menu that pairs with each of the six-courses on the gastronomic tasting menu, and we only have one red wine and one white, so it’s all about the cocktails."
